It’s the last day of September, which means tomorrow is OCTOBER! Time for crisper weather, apple cider, big scarves, football, bonfires, and CROCKPOT RECIPES GALORE! This Sweet Potato Apple Chicken is the perfect recipe to kickstart all the fall flavors. The fact that this tasty dish is gluten/dairy free is just a healthy bonus. 😉
Sweet Potato Apple Chicken, slow-cooker style
*Original recipe found over at Stockpiling Moms blog, but my tweaked recipe is below.
4 sweet potatoes, peeled and cubed
3 chicken breasts (can be frozen or thawed)
salt & pepper to taste
2 TB minced garlic
1/2 onion, chopped
1 cup unsweetened applesauce
2 tsp apple cider vinegar
1 TB chili powder
pinch of cinnamon
1/2 tsp ground ginger
-Spray slow-cooker with non-stick spray.
-Add chicken breasts and then sweet potato chunks, and season with salt/pepper.
-in a small mixing bowl, combine garlic, onion, applesauce, vinegar, and remaining spices. Stir and pour mixture onto the chicken/sweet potatoes.
-Cook on low for 6-8 hours or cook on high for 4-5 hours. Before serving, shred chicken with a fork.
*Delicious served over rice with a side salad!
