I made a loaf of this bread last week and it was gone within a day… so moist, flavorful, delicious, and EASY! Perfect with a cup of coffee, and my toddler loved it too. It’s packed full of big, juicy blueberries, with just the right hint of banana. Best of all, you probably already have all the ingredients on hand.

Blueberry Banana Bread
Original recipe found over at Eazy Peazy Mealz blog, but my tweaked recipe is below.
3 bananas, mashed
1/3 cup butter, melted
1/3 cup sugar
1 egg
1 tsp vanilla
1 tsp baking soda
pinch of salt
1.5 cups flour (all purpose)
2 handfuls blueberries (I used fresh since they were on sale at my local grocery store)
-Preheat oven to 350 degrees, and grease a bread pan with oil.
-Mix bananas, butter, sugar, egg, vanilla, baking soda, salt, and flour together. Fold in blueberries gently.
-Bake at 350 degrees for 45 minutes. It slices better after it has set for a few minutes.
